I'm a fan of making coupons you can trade in for things like a massage, a home made meal of his choice, maybe even a "chore" that he's responsible for but you know he loathes doing.
I once did a theme gift for my husband, I had one gift for each of the five senses. I made his favorite brownies for taste, a back massage for touch, a CD of his favorite band for sound, I think I got him some bodywash in a scent he likes for smell (fresh made baked goods can work for this too), and rent a movie or go to the theatre to cover sight. He loved it and it made for a really evening for both of us.
