I would use the name/address that you are having the RSVP's mailed to. My FI and I are also hosting/paying for the wedding ourselves and I know I will have the RSVP's mailed to me.
I wrote both our names for the return address and my address because I was the one looking after RSVPs. If you may be moving in the near future, I would make the return address one that will stay constant until your wedding.
Guests will also look at the return address to see where to have gifts delivered. Some people still bring a gift to the wedding, but probably over half of your guests will just order online and have the gift delivered directly to you. So the address should be for the person who is best equipped to receive and store all the boxes. This is also another reason to use the address that will remain constant after the wedding - so you don't have to move all your gifts.

I am planning on sending out my invitations in one outer envelope. I am ordering return address labels to save time on handwriting out our names over and over (though I do plan on handwriting the guests' names and addresses). We do not live together...so how do I write our names on the label? Both of them? One? Whose address? We are hosting and paying for the wedding completely on our own.
