Have you read the vendor reviews section at ProjectWedding.com (link is on the right of the screen)? Also, look into having your favorite restaurant cater.
We went with Heidi's Catering. Heidi, the owner, was very nice and her food is great. Technically she is the only tasting we went to before hiring a caterer. We did get bids from Arizona Taste and Creations in Cuisine. AZ Taste is a little on the higher end of the price range, but that could be because of the entrees we want (beef and salmon). Also, AZ Taste and Heidi's are preferred caterers at a bunch of venues around town, so that influenced our decision a bit. Also, Heidi's only needs a $100 deposit to reserve her, whereas most of the other companys wanted 30-50% of the total cost as a deposit. We were booking over a year and a half in advance so that seemed ridiculous to have to pay $5K up front.
I looked on weddingwire for catering reviews, then I emailed companies for bids. After that we set up tasings based on the prices we saw.

Does anyone have any suggestions on catering companies in Phoenix? Any companies you are using/have used? Any companies that you were not so fond of?
