Perhaps to save money you could use silk stephanotus? They are readily available and stephanotus is such an usually perfect flower even real ones look too perfect to be real!
Also- if you go with silk stephanotus, perhaps you could die them red for the BM bouquets so they would be a perfect inverse of your bouquet?
As for the roses- I say go with the real thing. They are pretty reasonable. I got mine from Bloomsbythebox.com and was really happy with them. They have the Black Magic roses for $1.49 as stem (cheaper if you buy 150 or more stems).
As for how big things should be- the only way to really know (if you can't just count blooms in a photo or display) is to try it out yourself. This is especially important if you want to DIY them- you've got to practice.
I think your ideas sound beautiful- good luck!

Ok so I saw a picture and it inspired my whole florals concept.
My colors are a dark red (burgundy but without the purple undertone) and white. So I want Dark Red roses (I think the black magic rose or red velvet roses would work best) in a cluster with a few scattered stephanotis (I know they are expensive...
) with pearl pics.
I was thinking since the bridesmaids are in red I would do an inverse of my bouquet. They will have smaller clusters of white roses with red scattered flowers-I was thinking maybe gerber daisies or carnations. Not really sure which maybe there is a better choice?
For the 8 man round tables I am looking for a dome shaped arrangement of the same red roses and scattered stephanotis (maybe there is a cheaper small white flower I could use that lends a similiar effect?) We are going to have a hurricane glass with a votive in the center.
Then on two large fireplace mantels we are going to have a kind of organic looking spray of roses and greenery, like there is a rose bush growing on it.
Anyway thats what I have in mind. What I don't know is if I should go with ordering bulk flowers or go with a florist or go with silk. I am not sure how large the arrangements need to be. I am pretty small overall tho I am 5'5". 3 of the bridesmaids are shorter than me and the last on is 5'8" or so.
Any thoughts?
