I made this for the first time. Usually I cook brussels sprouts with something sweet (honey or maple syrup) and I thought the shallots would get a bit sweet when roasted…but I am worried it won’t taste good and will be too bitter. Any advice? What would you add? Or do you think leave it as the recipe says (shallots, brussels, olive oil, salt)?

When I roast brussel sprouts I just use olive oil, salt, and pepper and they’re delicious. They’re actually a bit sweet. Adding shallots will add wonderful flavor. I think you’re good to go. 🙂

@OctBride-2012: The shallots smell a little funny to me…like something chemically. PLEASE tell me that’s normal!!

I’ve never noticed that shallots smell chemically. I’m sure they’re fine. They definitely don’t smell oniony so maybe that’s what you were expecting. 🙂

I think it will taste lovely, I’ve never had brussel sprouts sweet only savoury. I roast them with mustard.

Shallots and brussel sprouts sound delicious! Shallots nave a sweet taste and the salt will a accentuate it. Yummm.

Leave it as is. If you roast them long enough, they will caramelize & it will bring out their natural sweetness.

When I cook my brussel sprouts, I chop up a couple slices of bacon with it. Adds a great taste!!
