We designed our invitations ourselves and had them printed on a high-quality stock at FedEx/Kinkos. So, lower price and still pretty nice quality.
Can you narrow it down to a cost range? People may differ on what they consider affordable.
I did my own, for about $2 per invite, including postage:
Paper-Source value bin Letterpress 5x7 Cards for invites

Paper-Source four bar cards in matching cream for response cards
Paper-Souce four-bar CLEARANCE envelopes for response cards
I printed everything myself on my home printer (needed a direct feed, ink-jet).
Note: I live near a large Paper Source store, so I stalk their clearance/value sections once a week to accumulate enough product to do 75 invites. :)
I bought 2 40-packs of "Brides" brand invitations from The Flower Factory. We had 20% off coupons, so they ended up being about $8/each. They are simple but elegant. My dad (who works in printing) will be printing them for us, but, if we didn't have that connection, we would take them to a printing shop (this is what my sister did). Our RSVP is online, so no cost associated with that. Shipping is $.42/each, so the whole ordeal will cost us less than $.75/invite.

I am designing my own and having them printed through Vistaprint. I don't know a cost per invite yet, but they have killer sales every few weeks for different products and I plan on ordering mine then.
There are lots of threads about Vistaprint, if you're interested.
Invitations by Dawn has a ton of invite choices and lots of customization options. Orderes over $150 are shipped for free. Every few weeks they have a 15% off sale and if you get lucky you might catch a 20% off sale. I got 125 customized invites, 150 lined, self-stick return addressed envelopes, 125 response cards, and 125 RSVP cards and pre-printed RSVP envelopes all for $260. Compared to my next choice which was closer to $500, I was thrilled. The cards and envelopes are thick and all the printing is uniform. Love them!

Ladies, where have you found affordable but yet good quality invitations. I am somehow lost on this topic. I see alot of cute ones but I would hate to buy them and the quality not to be what I expect. I could print my own but I want to be sure they look professional. Ideas? Please share pics if you have them available!!
