That happens to me all the time too. There is a waxy coating on the squash and that us what causes me issues. I have learned to wear gloves. Eventually all that wax will peel off your hands and you will be back to normal. Try soaking your hands in baking soda/water or milk. That will cool any burning.

Probably just irritated. Wash with some gentle soap and put some hydrocortisone cream on it. An unscented lotion would be ok if you don't heve hydrocortisone.

Have you ever had butternut squash before?

I actually don't think it was the waxy coating on the squash. I have handled (and eaten) butternut squash several times before with no problems, but today I got a squash that had a lot of "juice" (sap?) that got on my hand when cutting it. I washed it off, then noticed a few minutes later that my skin felt kind of tight (like if you spill some elmer's glue on your hand and it dries), so I washed it again. I must have washed my hand 20 times this morning and it wouldn't come off! I tried putting lotion and hydrocortisone on it but there seems to be no affect...

@Miss Burgundy: That is a perfect description of what happens to me too! If I buy them from a grocery store I usually have no problem but if it fresh from the garden or farmer's market that it what happens. It always goes a way in a few days so I never think much of it. But I have started wearing gloves because I hate how my hands peel later.

It's likely a not uncommon contact dermatitis  reaction with butternut squash. Next time wear gloves.
