What relatively quick (and preferably healthy) meals do you make? Both DH and I love to cook, but we don’t have the time to make the types of meals we used to now that we have a baby. We aren’t picky – we love vegetarian meals, fish, etc. We’re also fine doing prep the night before (chopping veggies, etc). So, what are your go to weeknight meals?

LemonJack: I make grilled tomato and cheese sandwiches on naan bread. Seriously delicious and it take like five minutes.
Basically, get the packaged naan, spread a thin layer of basil pesto on one side, put cheese (I usually do Havarti) on half, then tomato slices, black pepper, and a little more cheese to hold it together, fold it over and bake in the oven just long enough to make the cheese melt.

Hi Lemon Jack!
I thought I’d share what we made tonight! It was fast, healthy, and yummy!
For the main course, we got a nice piece of salmon from the seafood counter at our gorcery store. I rub olive oil into the flesh, then top it with lemon slices and some red onions. I sprinkle it with pepper. We heat a cedar plank on the grill at medium heat, then place the salmon on the plank once it is heated through. The salmon cooks on the plank for about twenty minutes. You know it is done by testing the salmon with a fork (it should flake easily). The only prep work here is the plank – you need to soak it overnight so it isn’t to dry/flammable. Cedar smoked salmon is the best!
We mixed up a summer salad using one of those kits by dole – so fast and convenient.
I also made brown rice in our rice cooker – this part takes the most time. I spiced it up a little bit by modifying a recipe from weight watchers. I added some garlic, shallots, and walnuts to the brown rice to give it flavor.

Starshollow: Sounds delicious. I’ve always wanted to try fish that way. We might have to do that next week.

This week Tom and I made apricot glazed pork and cranberry chicken in the crockpot. Both turned out really well and we used the left over pork for some nachos. We’re planning a ton of easy crockpot meals this month, so I’ll share them as we make them.
