I'm going out to a steakhouse for work tonight and I've instructed DH to order pizza for himself. He did not argue with me :)
I'm thinking some spicy garlic shrimp and green beans. Maybe it'll make up for the calzones we ordered out last night because we both were too lazy to cook!
Last night I made cajun chicken alfredo, it's a copycat recipe from Red Lobster and is soooo good! Tonight we are going to look at a house (!!!) and will probably just go out or grab Subway or something afterwards. But I was proud of myself lasy night dinner came out very well...except I was super pissed that when I went to get the whipping cream for the sauce at the grocery store, it had a leak and spilled ALL OVER my brand new wool coat =(

It's been marinating since last night so it should be yummy! Having it with a side salad and some mushroom herbed rice :)
Spicy Cajun ranch chicken in the cast iron with baked sweet potato chips as a side... Cannot wait!
Pesto "Pasta" - The pasta is zucchinis sliced up, sauce is some basil, olive oil, pine nuts, garlic, lemon juice, salt and pepper, lil bit of nutritional yeast (mixed with my magic bullet). - I make DH regular pasta but we use the same sauce.
my fiance and i made bbq pulled pork in the crockpot for superbowl sunday... and he's traveling with work this week so i have the leftovers all to myself :)

ill probably throw together a side salad so i have some sort of veggie intake :)
I have class tonight and I forgot to pack a lunch for me, so I'll either be eating out of a vending machine or going to a local fast food place. Not a good meal night for me tonight. :(
I made my own dough last night and did stuffed crust pizza... It was sooo good! I'm trying to home cook anything "bad" we feel like instead of ordering out so it's better for us.
I've got some left over dough so I'm thinking we might make calzones/ pides tonight (thanks for the inspiration MercyK!)
My FI teaches a lab on Tuesday's until 7:30, so Tuesday's are my 'me' night which usually consists of a beef nacho salad from Taco Bueno with the queso, beef, and chili sauce on the side. My FI doesn't like Taco Bueno so I try to eat it when he's not around : )
Asparagus and chedar stuffed Chicken breast with an asian side salad and brown rice.
"Meatza" topped with kalamata olives.
Basically, it's a "meatball" recipe (without breadcrumbs), rolled out onto a baking sheet, baked, then topped with sauce, cheese & olives, broiled, and sliced like a pizza (that you have to eat with a fork). It's my fiance's favorite & it is soooo good (and low carb :) )
Tonight we are having the leftover chicken enchiladas we were supposed to eat last night.
DH had to work late, so I went and met him by the office and we got steak frites. It actually turned into a nice date night, until he had to go back to the office until about midnight.
Hopefully he'll be home soon so we can have our yummy enchiladas.
I'm having a shredded chicken burrito. I made shredded chicken in the crock pot the other day, so I'm using leftovers from that. Whole wheat tortilla, sweet potato puree, with sauteed green pepper, onion, spinach, and black beans. Mmmmm.
I'm not positive yet, but I'm leaning towards Greek-inspired Burgers...with feta, spinach, oregano, dill and garlic, and a side of couscous. Maybe the couscous cakes that Giada is making right now, with some sort of yogurt sauce. Not sure yet.
I am making this recipe for Chickpea Cutlets!
We'll be topping with dijon mustard and serving with roasted fingerling potatoes tossed with dill, and a salad. One of my very favorite meals.
I am making this awesome chicken nugget recipe. It's so good that FI even ASKS for it to be made (which is unusual given my cooking :-))
We'll probably have rice and corn along with it.
Fast food because I worked last night and have work tonight. I slept until 5, but have to be in work by 7 and FI has to be at school by 6:30. Lamesauce!!!
DH has the stomach flu, so I am not sure what we are having. He keeps asking for breakfast food, but I don't think that is a good idea....I'm trying to convince him that soup would be better!
Ribs and mashe potatoes and courn yum ribs have been in the slow cocker since 6am
@Ms Bookworm: what is vital wheat gluten? I've seen that before in other recipes but I had no idea what is was. Chickpea cutlets sound like something I'd like to try.
Tonight is our trivia night so we're sticking with something quick: Turkey dogs and store bought southern style potato salad
We're headed to a food truck gathering with a bunch of friends + game night.
@june42011: Vital wheat gluten is the protein from wheat after all the carbs/starch have been stripped away so nothing but protein is left. It comes in dry flour form, and is used in a lot of vegetarian meat substitutes, as well as in recipes that need something to bind the ingredients & give them structure/chewiness. (Here is the Wiki entry on it in case you're curious.
) I buy mine from the bulk area at my local co-op/Whole Foods (it's super cheap!), but Bob's Red Mill also manufactures it and sells it pre-packaged.
It is super high in protein and just an awesome ingredient. I make veg sausage with vital wheat gluten, chick'n strips, mock duck, etc. The chickpea cutlets are awesome (I use less oil and actually bake mine instead of fry them). I also add a couple tablespoons of VWG to homemade bread to make the loaf sturdier and easier to slice.
We are having Panera, probably a BBQ chicken chopped salad for me and some kind of big meaty sandwich for him :)
Last night I made chicken fajitas - one of our long-time favourites that we've been making since we met!
Tonight's dinner is boring for us, but easy to make: pork chops stuffed with apple stuffing, roasted broccoli and mashed turnip (we are big fans of underrated veggies!).
The meals that I have planned for tomorrow and Thursday are a little more interesting: tomorrow - chicken parm (this recipe, which I adore), garlic roasted green beans and a big green salad; Thursday - white bean and shrimp stew, another big green salad.

Last night I made a good and healthy and EASY meal... and DH LOVED it! Plain ol' bagged salad and croutons (made from a bread machine failure!) with some breaded, lightly fried chicken strips!
Tonight-- I'm thinking of this sweet potato soup and some homemade bread, and maybe green beans on the side.
