I’m in the mood for delicious-yet-healthy comfort foods for fall now that it’s October. I’ll start:
Tonight we’re having homemade veggie burgers topped with sauteed mushrooms and swiss cheese, with twice-baked sweet potatoes and a kale salad. YUUUUUUM.
Tomorrow, we’re having split pea soup with butternut squash and quinoa-stuffed bell peppers.

@QueenOfSerendip: Tonight pesto-ranch chicken in the crockpot, tomorrow portabella pizzas! (It’s like making a pizza on top of a big portabella cap instead of dough)

Chicken cutlet sandwiches, a salad, and what ever veggie I have in the freezer.

Tonight is Garlic Brown Sugar Chicken, tomorrow is either Cheeseburger Pie or Crockpot Chicken Curry.
(As a side note, these are healthier than they sound !)

Made my own tzatziki and melitzanosalata (Greek roasted eggplant dip).. we’ll be eating it with olives and pita bread – yum 🙂

@ValerieBee03: That’s an awesome idea!! Lately we’ve been making pizzas on naan bread that we pick up from the indian restaurant once in a while… but this sounds so good and low carb!

A baked egg dish done with latkes and sauteed mushrooms and kale. Yum.

Tonight, we’re having steaks. mashed sweet potatoes, and green beans.
Tomorrow night, I’m making homemade gnocchi with pesto sauce and roasted vegetables.

All these posts about pesto make me want to make my own tonight! Hmmm….
We’ll probably end up heating up some leftover pork roast and roasted cauliflower.

We ordered in. Fi was in a car accident last night so we are both kind of exhausted after very little sleep. He is fine though so that’s great news. And we had dinner early, Hopefully early to bed as well.

Sadly I’m making a quick omellette tonight. I have a pilataes class and then a zumba class after work. By the time I get in I will just want to throw some veggies and chorizo in a pan with eggs.

Buffalo chicken meatballs and peas! Tomorrow is our anniversary though (3 years!) so we are getting fancy and going out somewhere nice… Much more excited for that 🙂
