We our going to Maui for our honeymoon and wanted a secluded feel. We got a great deal at the Ritz which is in Kapalua-the far west part of the island. In the summer months, it is a great part of the island to visit but it can be the rainier side of the island in Winter. A lot of people will recommend Wailea but all of the photos look like any other resort location I've been too...you look down the beach at other hotels and tons of people. I highly recommend you check out the Ritz Kapalua on tripadvisor.com We got the deal of the Century for June...it is worth checking out. Also definitely buy the book Maui Revealed. It has a ton of great advice.
I've been several times and my favorite beach is Kaanapali. For a super nice hotel the Westin is amazing, but there are some cheaper hotels as well, as well as condos you can rent.
I agree about Kaanapali. I just did a blog post on some places to check out in Maui... you can read it here:

We just got back from Maui from our HM (week of MAY 10TH). We stayed at the Sands of Kahana. WHen we were there, all the beaches were pretty much secluded. Kapalua Bay is really beautiful. We drove about 2 hrs to go to Black Sand Beach which is also beautiful.
Absolutely agree with the Kaanapali-lovers above! Have been twice already and LOVED the Westin. Have actually seen beautiful weddings on the grounds there. They have an adults only pool so it's relatively easy to get away from any families with kids for relaxation. Koala restaurant is great (on site) too! Fabulous beach, great luaus, and close enough to drive to other areas to miz it up some nights. Have also been to Oahu / Waikiki beach - equally as fabulous but more urban feel. Highly recommend the Outrigger on the beach or the Hyatt.
If you go to Maui - GO SEE ULALENA!!!! Its an AMAZING show everyone should see. Its the folklore history of Hawaii told through a Cirque du Soleil style show. Its impressive and amazing. MUST SEE!!
We're planning on going to Hawaii for our honeymoon too. I'm so glad you posted about this because I'd like advice as well on good places to go. We want to go somewhere where it's not as touristy...

We like to go to a beach that's less crowed, clean and easy to get around. Base on the beach I'll find hotel. Any suggestions? Anyone know if there are deals/promotions going on in Maui?
