Woodstock Moveable Feast Catering! Although we didn't end up using them bc my wedding's going to be about 1.5 hours north of Woodstock, we went for a tasting and the food is great. It's a husband and wife team who have been in business for over 15 years. I'm sure they can create a menu for you that is under $40/head.

I contacted them, but he's now retired :(. Also, he said it would be tough to find anyone in the area for under $40. I'm still hopeful though! May have to venture a little further upstate and look around the Albany area.

Try Pamela's Traveling Feast.
When we were thinking HV she had amazing stations packages for ~$75 and that's 4 different food stations, booze and all the stuff she has to bring in that you already have.
They were extremely nice and so helpful. Had we needed a caterer we were considering bringing her down from HV to cater in NYC. But our venue came with a caterer.

ETA: I just dug through my emails and there is a sample menu for a buffet menu. Butlered hors d'oeuvres and a buffet dinner. Pretty decent spread. A custom wedding cake with coffee and tea. That was ~$56. I'm pretty sure their prices includes all the rentals that you already have. So I'm sure they can meet you at $40.
Thanks for these suggestions! I have a tasting next week with the woman trailmix recommended, and I'm super excited. But Pamela's traveling feast seems like a good company too.

I'm having a tent wedding, and our rental company is providing our tables, linens, plates, etc. So, I'm trying to find a caterer who can come to me (the wedding is taking place at my fiancé's country home in Woodstock, NY), and provide a buffet-type meal with appetizers (liquor and bar fees not included-- I'm bringing in my own alcohol and bartenders). I'd love to keep the caterer under $40 a person, as we're expecting over 150 guests. Thanks so much fellow Hudson Valley Brides!!!
