6 months of stress eating and now I can't fit into my dress...

Any tips on how to make meatloaf?

    For Valentines Day my boyfriend REALLY wants me to cook for him and REALLY wants meatloaf.  I'm vegetarian so I have NO CLUE how to make anything meat! Of course I want to make it for him especially since he's decided to make me a special dessert. I have a recipe but I still see myself screwing it up therfore if any one could tell me any tips and whatnot on meatloaf I will be GREATLY appreciative! I know this is probably a silly thing to ask but I'm totally clueless here, haha.

    Mine usually falls apart because I can never pack it tight enough. lol. I also like to put a dash of A1 in there!

    Mine consists of a base of ground beef, milk and white bread (crumbs), which gives it a great consistency, and then the flavor comes from the spices I put in, along with Worteshire (sp?) sauce.  I can PM it to you or post if here if you'd like!  It's delicious (if I do so say myself), it is one of my staples for having people over and they always love it.

    it's very easy to make, don't be nervous! i always use ketchup and the onion soup mix. mix it all together with your hands, it makes it easier.

    I use ground beef, eggs, ketchup, some garlic powder, a pack of Mrs. Grass onion soup mix and a few slices of bread that I tear up myself.  Something about the actual bread bits instead of crumbs makes my boy go crazy for meatloaf.  He actually wants me to make it every Monday, and he and his friends have donned it "Magical Meatloaf Monday" so I had to turn a 1 lb of beef recipe to a 3 lb recipe! I do also add in the Worcester sauce from time to time... to mix it up. ;) Good luck!

    I use 1 egg per pound, crackers (apparently I should try bread! lol) ketchup, mustard, woshtisire sauce, dash of A1, onion and I top it with regular bbq sauce. It's easy, mine just never sticks together.

    ETA: @Abbee-I'd love to try the recipe, too if you don't mind! Might give me a better idea of what do do! = )

    PS - the dry bread crumbs she uses are what you would use to make fried chicken cutlets, and instead of making one big loaf, I usually divide the meat after I am done mixing and make two smaller loafs.

    I use 1 lb turkey ground and 1lb ground round.  Add in 2 eggs, 1 cup seasoned bread crumbs, chopped onion, chopped mushrooms (gives it moisture) and some worchestshire sauce to taste and some salt n pepper. 

    In a separate dish I mix equal parts of ketchup to honey mustard and add in a few tablespoons of brown sugar.  Glaze it over the top w/this mixture (really good) and then put in oven at about 350 and bake until ready.  Just check it periodically.

    I like to use cornbread crumbs or cornmeal.  Gives it a southern kick!

    I use 2 lbs ground round, 1 green pepper, 1 white onion, two eggs, breadcrumbs, A1 sauce, a packet of McCormick meatloaf seasoning, salt, and pepper.  Put it into a loaf pan, cover with tin foil, put in the oven for an hour at 350.

    my easy peasy meatloaf recipe:

    1 package of jimmy dean sage sausage

    1lb ground beef 85 (you dont want to go too lean for this or it will fall apart)

    1 bottle of heinz chili sauce

    1 egg

    1 small onion diced (i like to soften/brown in small pan with butter first but not necessary)

    salt and pepper to taste

    1/2 cup of plain breadcrumbs

    Preheat oven to 350

    in a big bowl, mix all of the above ingredients by hand except for the heinz chili sauce. take 1/4 cup of the chili sauce and put in meat mixture. take a large pan (i use 9x13 pan - if you use an actual loaf pan the juices have no where to run off) and form long flat loaf in pan.

    cover the loaf with half of the remaining chili sauce, cover with foil and put in oven for aprox 30 mins.

    after 30 mins, remove foil, and put the remaining chili sauce over loaf. (if theres alot of liquid in pan you can drain some of it or ladel some of it out) return to oven for another 15-20 mins. meatloaf is done when a knife in center comes up clean, or when internal temp reaches at least 160 degrees (use meat thermometer in center)

    let sit on stove for an additional 5 minutes then slice and eat! i like to serve it with mashed potatoes and green peas! :)

    I unfortunately just eyeball most of the ingredients, but I do use the following:

    1 lb ground beef

    1 egg

    2-3 slices of bread tear into pieces, varying sizes usually

    1 package of Mrs. Grass Onion Soup Mix

    Enough Ketchup to wet it all

    Dashes of garlic powder, pepper and Worcester sauce.

    You can sprinkle brown sugar on the top for a glaze, I don't always.

    Cook at 350 til the juices on top are clear, and the top edges get a little brown and crispy.

     

    Sorry, I'm not very accurate when it comes to cooking! Seems to work out for me every time though, we've never met a meatloaf that we don't like.  It's nothing too fancy, so I am going to have to try some green peppers, cornbread bits, that sounds awesome!

    Cook's Illustrated cookbook is my go-to cookbook for 99% of meals. LOVE it! And their meatloaf recipe is yummy!

    I like to make mini-meatloafs, a recipe my fiance taught me. They're really easy, and its nice for either giving everyone their own meatloaf or for having several pre-portioned helpings for throughout the week. I take a 1-lb or so package of groud turkey (but other meat works, too- but this recipe works best for something relatively lean- 85% lean at the very least). Use about 1/4-lb for each mini-meatloaf, and basically take the meat and form it into a small ball or loaf shape. Each loaf goes onto a peice of foil large enough to wrap it (and some veggies), with a little bit of extra room- to make a packet. Toss in about a handful of frozen veggies with each loaf. On top of each loaf, sprinkle some powdered onion soup mix (about 1/4 packet each, if you're making 4- I like Lipton Beefy Onion Soup Mix or Mushroom Onion Soup Mix). Now close up your packets (just wrap them around everything to cook). Place them in a 9x13 pan, and cook on 350 for about 30-45 minutes, until the meat is cooked through (no pink). The result will be juicy and delicious. I love this recipe because its SO easy!

    I don't have a recipe because I just kind of eyeball mine and see if it smells right, but a tip to keep it from falling apart is to make the meat mixture ahead of time and stick it in the fridge for a couple hours (or over night) and it stays together much better. You can also use a loaf pan instead of just keeping it free on the pan. Maybe I'll make a meatloaf this week too... lol sounds good now!

    i make mines in cupcake pan... i tried to do the whole one but it always crumbles so i make the meats as any meatloaf recipe and put the meat in grease cupcake pan and on top put some cheese and thats it

    I eyeball all of mine too.. But I use BBQ sauce (Tomato products make me sick), Italian breadcrumbs, egg, a small onion, and the leanest ground beef (3%fat usually) I can find.

    it turned out well! the texture was a little off but for never making it before it went well! it supposively tasted good too(being vegetarian i obviously didnt eat it) plus my sweetheart made me a very yummy desert in return :)

    Don't you hate trying to make meat when you can't taste it? I'm always so nervous it's actually terrible and no one wants to tell me! And R doesn't eat meat, either, so he can't give me a brutally honest opinion.

    My sister makes an amazing meatloaf and it doesn't have a single breadcrumb in it, or anything to substitute.

    Preheat your oven 350 degrees. In a large bowl, combine 2 lbs of ground beef with 1/2 chopped onion, a packet of onion soup mix, 1 egg, and 1 cup of either ketchup or bbq sauce (your choice). Knead it together into a ball. (Wash your hands thoroughly afterward). Line a glass baking dish with foil. Place the meat mixture into the pan. Bake for 1 hr. Top with additional ketchup or bbq sauce. The foil makes for easy cleanup afterward.
