I’m not at all a vegetarian, but a friend of my is vegan and posts a lot of recipes on Pinterest from ohmyveggies.com.

Also, a lot of recipes sites like SparkRecipes and Skinnytaste will let you sort or search for their vegetarian recipes.

I was a vegetarian for 5 years, and I have a realllllly really good vegetarian cookbook, every single recipe from it has turned out amazing. I bought it at a used bookstore, so it’s pretty old, but hopefully they’re put out a new edition or you can find it used online! I’ll check what it’s called when I’m home tonight!

I’m not vegetarian (I actually swing the opposite way and eat mostly paleo/primal), but there are some meals I cook that are meat-free. Here’s a few of my favorites:

http://www.bhg.com/recipe/pasta/grilled-garden-pasta/ (My “primal” version is just doing the veggies, no pasta, and using as a side-dish. But before I went primal, I would eat the original version with noodles as an entree, it’s enough to fill you up.)

http://www.eatingwell.com/recipes/skillet_gnocchi_with_chard_white_beans.html (with a few adjustments, you can make this into a Mexican-ish dish too; substite black beans, plain diced tomatoes and chili powder, shdredded pepper jack or taco cheese blend, and top with some avacado)

I was a veggie for 17years, had to stop because of my health- I wouldnt have been able to have children if I’d carried on so make sure you are getting plenty of Iron, b12 and other proteins.

Do you not have quorn or non tofu veggie alternatives? Qourn sausages are like 60cals each and pretty tastey. But actual meals there are so many veggie currys, stir frys and soups that are nice- and bean chilli is lovely! I used to like baked eggs as well with roasted vege- eggs are really good for filling you up!

Used to be – I had to stop because it’s tough getting healthy protein on a college campus with only a microwave. I still tend to avoid meat, though – I’ll just have it once a day if even.
