(Closed) Anyone follow the Paleo diet? Lunch ideas?

Not paleo but probably should be. I am gluten free and would love to follow this thread. Sadly, I don’t have tons of ideas for lunch/dinner.  I’m one of those day in day out kind of folks.  But would also love to hear recipes.

Depends how strict you are

Todays lunch was spinach salad with red onion, tiny bit of feta *optional, raisins, chicken thigh and reduced balsamic vinegar and avocado (literally took a bottle of cheap balsamic and reduced it in a pan by 1/2- sooo good)

Yesterdays lunch, was shredded cabbage, mint, cilantro, leftover thin sliced steak, peanuts, green onion, sprouts and shredded carrot with a vietnemese dressing (rice vinegar, fish sauce, lime juice, bit of honey, garlic and then I add olive oil)

Of course there is always leftover dinner

Tuna or egg salad on a pile of greens (you could use just vinegar, mustard and oil, but I use some greek yogurt)

Big salad of diced tomato, cucumber, cilantro, olive oil, red wine vinegar, oregano, avocado, diced chicken, red onion, garlic salt, paprika,

Those are cold ideas… but really you could east a lot of stuff that is hot.

Make a veggie bake lsagna style, layer zuchinni slices and eggplant as you would the noodles, make the stuffing out of your choice of meat along with shredded carrot. Sauce and mix the meat mixture with some eggs to help hold the form. Precook the veggies so the water releases.

I will usually eat either leftovers from dinner OR I love to take chicken/apple sausage (already cooked, just need to heat) and veggies! 

I LOVE spinach/romaine salads as well because you can pack it with protein… walnuts, hardboiled eggs, chicken, etc… and it’s fun to experiment with your own vinagrettes!

@ThreeMeers:  Great recipe ideas! I will be trying that Salad with the Vietnamese dressing soon!

Something I like to do is make a generous amount of mildly seasoned meat for the week and then use that as a base protein for meals. It lessens the boredom somewhat but still minimizes kitchen time. For example, I cook a few chicken breasts in the pressure cookean just seasoned with salt and pepper and then shred them to use in lettuce wraps, salads, chicken veggie lasagna, soup, etc. 

My favorite paleo dish is a sweet potato purée based soup with crumbled Italian sausage. I like to throw shredded kale and carrots into it when it’s nice and hot so they just wilt in but don’t get mushy. 

Oh, meatloaf is great, too.

We are essentially paleo. I usually pack my husband leftovers from dinner, but we also really enjoy salads with varying toppings. Essentially any sandwich can be turned into a salad, which makes it very versitile. We also really like lunchmeat wraps…essentially lunchmeat with sandwich toppings inside, wrapped up.

hi! i’m like 90% paleo and I do crossfit also! It really is more of a lifestyle than a diet. We do lots of different stuff with zucchini, squash and cauliflower.

we do lots of sweet potato pancakes..kinda like latkes. we do mashed cauliflower, stuffed zucchini/bell peppers. guacamole, salsa, bruschetta with your basic grilled or baked chicken/meat/shrimp/pork. we eat alot of leftovers for lunch but it’s all about meal planning! it’s definitely a tedious task but well worth it.
