Anyone have any Caribbean cocktail recipes?

    I wanted to serve mojitos, but I think it may be too complicated due to the mint leaves and all (we're bringing it all in).

    I've found some online, but I'd love to know any that people have tried and loved!

    I don't think this is Caribbean per se..but what about sangria?

    I use an inexpensive red wine that I know most people drink..I've also seen it with white wine and sparkling/champagne

    Oh I really, really, really wanted sangria.  Unfortunately, I don't want to cut up that much fruit, and I probably shouldn't make my BMs do it either :)  Fabulous idea, though.

    The Caribbean islands always serve Rum Punch.  It's soooo good.  Some places call it "Vitamin Arrghhh" (like a pirate says).

    Here's one recipe that is popular:

    • 2 ounces light rum
    • 1 ounce dark rum
    • 1 ounce orange liqueur
    • 1 ounce sour mix
    • 1 ounce cream of coconut
    • 2 dashes grenadine
    • top with pineapple juice


    It looks pretty too!!

    Second the rum punch suggestion.  I use the traditional recipe: 1 of sour, 2 of sweet, 3 of strong, 4 of weak. 

    For the sour, I use lime juice, sweet I use simple sugar, strong is dark rum, and weak orange juice.  I add a little nutmeg too.
