I got a crockpot for my wedding and I tend to work very long shifts and I was just looking for some good healthy recipes. I’m not really a huge meat eater so any chicken crockpot recipes would be great! Also, if you know of a good crockpot cook book that would be helpful too! Thanks 🙂

When I got my crock pot for christmas a couple years ago, my fiance also got me a great crock pot cookbook. It was the 3 in 1 cookbook. The sections are 5 ingredients or less, chicken, and soups and stews. It is a great book and I use it all the time. I think the best part about it is that the recipes are actually foods that I would make. I tweek my recipes a lot too and have found that these recipes can be altered to work with ingredients that you like or already have on hand and they still turn out really well.

If you dont have a programmable crockpot that you can delay turning it on, I would use dark meat chicken as white meat gets over cooked easily and mealy texture.
I just made last night so I had it done for tonight chicken legs on the bone (no skin) enchilada sauce onions and mushrooms. Ill shred the chicken tonight, add a bit of corn and eat it either over shredded cabbage to make a salad. Fancy? No, but easy and tasty.

I’ve actually put chicken breast and chicken breast tenderloin in the crockpot without using a programmable one and kept them in there for close to 11 hours without any issues, I do always shred it though so that may make the issue with the texture unnoticeable. The easiest crockpot recipe that I’ve found is 4 ingredient white bean chicken chili.
I also love this parmesan garlic chicken recipe
I made it with cous cous rather than orzo.
You can also go to the Crockin’ Girls website http://crockingirls.com/. They have a cookbook out but if you register your email address they’ll send you a shopping list one day each week and the associated recipe at the beginning of the following week. They have numerous crockpot recipes on their website.

Almost forgot to mention my most favorite crockpot recipe, this one has a few more ingredients and is a bit more work but it’s so worth it, make sure you make the cucumber slaw with it.

- Wedding: June 2017 - Vegas Wedings
Red potatos, then chicken, add some water to cover most of the potatoes and some italian seasoning. We turn the crockpot on low before we go to bed and off when we get up, so its on low for 7-8 hours.
I dont like chili but LOVE this recipe. Its now my Fiance and my sisters fav chili. I like toi go easy on the red peppers and chili powder and add salsa verde.
