I don't know of anyone is jersey, but we had a quartet for my wedding ceremony in the Bay Area and each guy charged $100, so I think your budget is reasonable.
No clue in Jersey, in NC strings were around 650 up, brass was 750 up.
We paid a little less than $400 for a quartet for just the ceremony (we paid extra to have them cover the cocktail hour too), the group we hired was a bunch of high school kids that are very talented and come highly recommended from other area brides who have used them.
I'd suggest checking around with area colleges who have music departments (or a HS if you're willing to take the risk) there might be some music majors who do this on the side, or at least they might be able to recommend some quartets in the area for you to look in to.
Mmm...for two hours with a pro quartet, you might need to try bargaining or concede on your budget a little. In the midwest, I kept getting quotes of $450 for 1 hr of playing, although I did have some quartets who were more willing to move on the price than others (about $50-75). I ended up going with a friend connection, saving us a lotta $$$.
I agree with Kermit, check out some more unconventional sources, like high school or college kids. My original plan was actually to hire a HS quartet -- the program in my local area is really good and my friends back in HS did wedding quartets too...I'm sure if you contacted some schools or ensemble groups directly, you should find some good leads.
I would definitely third the idea of checking with student musicians. Try contacting a local college/university's music department for ensembles. Our string duo is charging $150/person/hour to play at our ceremony. They're college students and this was, by far, the lowest price we found.
my friend is setting up her business as a professional violinist/ master of a quartet out of Connecticut. I know they vary their rates based on season and day. if your wedding is a saturday in june, you will pay more. If you can't make the quartet work a trio might be nice!

I believe we spent $650. This was quartet for 1.5 hrs and a single violinist from the quartet for the cocktail hour.
Try craigslist, colleges, high schools, etc! Also, try a trio, it should be less. You could always switch to a harpist for lovely and somewhat different string instrument.
