I have no idea if I will be brave enough to eat ours.  Even though it is sealed up pretty well, it still looks like a frozen brick that has had frozen pizzas, tv dinners and whatever else thrown on top of it.

Are you going to eat yours?

@LGenz:  so true, I would kill for some cake right now!

I just asked DH if he is going to have any and he said NO WAY! (party pooper)

He better eat some or it will be bad juju.

Our baker for our wedding cake was amazing, and she gave us a certificate for a free (fresh) top tier for our first anniversary! We are so excited, because our cake really will be as delicious as the day we got married!

No.  :(  Our baker said not to keep the top layer, and she'd make us a new cake for our anniversary.  Low and behold, when our anniversary rolled around she was pregnant and too busy to make the cake she promised.  I'm still disappointed about that one.  It was damn good cake!

@panterapeach:  "Cash it in" -- so well said!

My husband is excited because while I insisted on having white cake for the wedding, I promised we could order the anniversary tier in chocolate, with the same filling and frosting, etc.

No! DH thought we were going to though. We cut into it last week for our 1 month anniversary. It still tasted really good and moist, but I can't imagine how it would taste after 12 months....

I was trying to eat it when we made it home from the honeymoon, but my DH was adamant that we should put it up. Thanks to him,,, and his patience. I wrapped the cake really well with plastic wrap, aluminum foil, and a plastic baggie. So, its in the freezer and we plan on eating it a year from the wedding date..... (I have no idea what it will taste like).

We are hoping to, however we'll ahve to make a trip back across the atlantic to Maine to do it!

We won't be able to do it right on our anniversary because we will be in in Munich for Oktoberfest, so we may either do it a bit early or a bit late.

Anyway, if it's awful MIL can just make us a new one since our wedding cake was her recipe!

There is no way Lance will be able to have cake in the house and not eat it.   LOL

I'll go back in a year and pieces of it will be gone or something. haha.   I like the idea of just going and getting the same baker to make the same kind.

Nope!  We pulled it out on our 1st month anniversary and it was gross/freezer burn (even though it was wrapped in plastic).

I'm going to try. I tried to super wrap it, like quadruple wrapped...but a year is a long time. If it tastes horrible, I'll pick up a new one. If it doesn't, we'll eat some, then invite friends over to share the rest because it's pretty big!

I froze the cake in alternating layers of plastic and aluminum foil.  We'll see how it is when it thaws around anniversary time.

Luckily, the bakery included a free anniversary cake in the price we paid for the wedding cake, so we'll have that too!

I thought we were going to until I read this thread. Haha. We served our top tier, so we had them deliver 4 petit fours for us to save for our first anniversary. But I haven't wrapped them or anything. They're just in the cardboard. Maybe we'll eat them for our 1 month, and reorder for our first anniversary. However, I'd really want to order the top tier in the same chocolate we used for the groom's cake. I liked it better. Haha.

We'll try!  We're lucky to have a deep freezer so it will probably go into that.  FI's aunt is baking our cake for us, so maybe I'll ask her if she has any tips or special containers to help it keep better!

I thought the whole 1-year tradition was back when a wedding cake was a fruit cake (so it would actually improve with age).... has anyone else heard this?

Hells yeah. It looks yummy! I heard from a friend of mine that if you do it right, it tastes the same as it did on your wedding night.

we ate ours a bit longer than a year after our wedding--it was being stored at a friend of mil's house since she had an extra freezer, and we couldn't coordinate to get it back until thanksgiving (we don't live in the same city anymore), so it was a year and 3 months-ish after our wedding...and it was DELICIOUS! seriously, it was super moist and amazing. we ate the whole thing. it was completely bounded by fondant, so maybe that helped seal in all the yumminess?

My MIL was the first person to tell me about this tradition. I thought it was gross but DH froze a peice anyways. After that big storm on Halloween we were without power for a week so we had to throw it out. DH was so sad, I was relieved! It's his favorite cake so I'll just go buy him a new one on our anniversary.

Yes and no. We didnt love our wedding cake so for our 1st anniversary, I had another cake made for DH (that was red/white/blue on the inside!). The cake I had made was from the baker that we originally wanted to go with, but was too expensive.

We did end up eating a bite of our year old cake, but it paled in comparison to the anniversary cake I got!

We plan on having the same baker make us a little cake for our first anniversary. The game plan was to use our top tier, but turns out that it can only be frozen for four months :(

@oracle:  I'm sure you're right about the fruitcake thing.  It does get better with age.

It's crazy but I am so excited to eat the top layer of our cake on our 1st anniversary!  We've only got a little over 4 months to go and I've been doing a monthly countdown since we put it in the deep freeze. LOL It's wrapped in a milliion layers of plastic wrap, tin foil, and finally in a cardboard box that is all taped up and it's out in the large freezer that doesn't de-frost so hopefully it will taste good.

Our top layer is huge so we're planning on having both our families over for cake since we share the same anniversary date as both his parents and mine.  I might make a back-up cake just in case though.... :)
