A boppy pillow or blankets might be nice as well.
I second, diapers and wipes. Buy size 2 rather then newborn or size one, since she'll probably get a ot of diapers since she didn't register. Include a gift receipt, just in case she's using cloth diapers or has a brand preference.
I usually hit up Target in the baby section and get some onesies (gender related), swaddling blankets and some stroller toys.
Do you know the gender and name? If so I always think that some wall art with the babies name on is super cute.
Could you get some pamper bits for mum to use now, and then some bath bits for the baby when s/he's here?
I will go against the grain and say do not get diapers or wipes. People are super picky about what brands they will use and what works for them and then they have to deal with returning things. I suggest Aden + Anais swaddling blankets. You can never have too many.

Baby books - we give them to all our friends to use at bedtime. The Little Golden Books are a nice blast from the past for most parents.
You could also get an Angel Dear blanket and ring. One of my favorite boutiques sells out of these super quickly. I have a stockpile of them for our future children and others as gifts. I'm partial to the lamb because I'm a knitter.
Onesies, diapers, and wipes.
ETA: the new mother can always exchange the diapers/wipes if they want and the package is unopened. It's pratical and anything else they may receive 100s of, but babies go through diapers like water.
Be careful with diapers, as more and more parents are using cloth diapers now days. And if you do gift them, make sure to include a gift receipt just in case if they are going cloth or using a different brand.
Yeah I think a lot of new moms are really picky about diaper brands these days. I think onesies, swaddling blankets, baby books, teethers, or just cute baby clothes (if you know the gender) would be perfectly fine!
You could always go with a gift card and a small book or something...

What should I get for a baby shower for a gal I barely know, who isn't registered. It's through work. I feel clueless.
