I saw this online and got a huge kick out of it. Mr. Hedgie LOVES bacon. Seriously. It would be considered it's own major food group if it were up to him. Thankfully for his heart, it isn't. But, on Valentines Day I plan on surprising him with a Candied Bacon Bouquet! The instructions I found don't include candying but I am going to add that part. He will die laughing and seriously enjoy it. Here is my question though, around Christmas/Hanukkah Mr. Hedgie was begging for somebody to get him chocolate covered bacon as an inexpensive but awesome gift. Nobody did. So, I was thinking, why not dip these in chocolate at the base? But then I was worried that would take away from the look. Thoughts? Thoughts on the bouquet as a whole?

What about doing some chocolate and some not? I think either will look great.

I have no idea if I could ever pull this off. But let me tell you this, if I was your husband & you gave this to me I would love you FOREVER! LOL I loooooove bacon! I could and seriously would if it didn't cost so much eat it THREE times a day EVERY day!

...as for the chocolate, I think it could take away from the look of the bacon... I say - go all candied bacon! Heck, I want to figure out how to do this!!
I'm cracking up at the instructions - drill hole in the muffin pan?! There must be a better way than destroying a muffin pan!! Ideas??
@oracle: I was thinking the same thing. I know they sell one time use muffin pans and I figured I would look for one of those. Squish the sides a little so they were smaller and cut a hole in the bottom. I just can't get behind destroying a metal muffin pan! I mean, those things are expensive and what can you do with it after? Make more bacon roses I guess. lol
@Ms Hedgehog: I third that- there must be like a cheapo aluminum tray.... or you could get metal muffin liners and place them in a pan.

Drilling holes in muffing pans...I think a man wrote these instructions. LOL.
I could make these for Mr.ND, or my sister. We always tease her that she's like the dog in the 'Beggin Strips' commercial. "I love bacon, I love you, I love bacon, I love you!" Hahaha. Thanks for the link!
ETA- To keep the look of the bouquet, could you buy a Dove chocolate rose and replace it with one bacon rose covered in chocolate? Then if he likes it, he can dip the rest before eating them :-)

Chocolate covered bacon is absolutely awesome (though sounds creepy lol). I would maybe do half and half, so he could have a choice. Although, my fiance refuses to try chocolate covered bacon, so, if your fiance is like mine, I'd leave it off.

@les105: Steal away! And I might do half and half... Hmm...
you could also loosely crumple up aluminum foil and rest the bacon on top and let the fat drain into the aluminum foil crevices

@Crabbabs: That is definately a good point. If I make aluminum rounds and aluminum cup liners it should work. Now, just to find a decently priced mini muffin pan...
Did I miss the candying part in the instructions? How do you candy them?

@oracle: That isn't in the instructions. I am adding that part. You basically coat them in brown sugar and then bake like the recipe says.
I wanted to do this this year but I won't have time to make them fresh on Valentine's Day so I went with some exotic truffles instead. I think the awesomeness that is a bacon bouquet should go without chocolate. You can always get him a Vosges Bacon Bar to go with it.

As for the muffin tin conundrum, I'm pretty sure that pre-cooking the bacon to about half-done will get rid of most of the grease. Then you can put them in the muffin tins to finish baking. We make egg-cups with bacon in the oven and that's what I do so that they're not swimming in grease by the end.
He's a guy. He's going to care WAY more about the taste then the look. And...if you do them all chocolate covered, he's going to bite down on one thinking its just plain chocolate or something, and be SO EXCITED
I say in for a penny, in for a pound! This is already a crazy, crazy idea, so what could be better than chocolate on bacon. My FI would die from happiness overload if I made him a bacon bouquet, and if your FI covets chocolate on his bacon, then go for it - I say!!
Just food for thought... rather than straight up candying, what about a spice rub that combines chili powder/paprika/brown sugar? If your DH is into spicy/sweet, that might be good too!

FI would love this. Too bad I am the least skilled person to ever set foot in a kitchen, haha. He'll just have to settle for some of the Vosges stuff. ;)

@eloping: Whole Foods carries chocolate bars with bacon on the inside. I was nervous about trying it, but it's strangely really good! Sweet chocolate and salty things are yummy together.
My favorite local chocolate place makes milk chocolate covered popcorn. Yum!
There's a local burger place that has an appetizer of bacon with a maple mallow dipping sauce. I'm pretty sure it's just marshmallow fluff with some maple syrup. I'm going to try to copy the sauce to go with the bacon bouquet.
I've got to admit that bacon with chocolate does not sound appetizing to me at all, but if your man's into it, I say go for it! Mr. H would LOVE ME FOREVER if I made him one of these!

You are already stepping out on a limb trying something new, why not go all out and add chocolate is my thinking especially if your SO has requested such a gift in the past!
Couldn't you just roll the bacon and secure with a toothpick instead of drilling holes in tins?
