uh.. you are making me hungry! I'm a meat and potato eating kinda gal so a potato bar is heaven to me!! I was thinking about doing the same thing, but I think we're going to do mashed potatoes. I say go for it! wwoo YAY for spuds! lol
Never been to a wedding with a baked potato bar but have been to other events that have and they went over quite well.

At our tasting, our caterer served a mashed potato bar, and it was fanastic! My fiance and I were so happy to put our favorite toppings on our potatoes. I think it's a great idea!

I've never been to a wedding with a BAKED potato bar, but I have been to one with a MASHED potato bar. They served the potatoes in martini glasses, and the toppings were SOOOOOOOOOO good.
omg sounds amazing!!! we are doing a breakfast potato bar served in martini glasses with all of those toppings, but this sounds amazing!! i definitely woul deat it!
Baked potato bar is my favorite thing ever when its in our employee lunch room! You can get super creative with toppings too - weve done it with shrimp, mushrooms, chicken, short ribs, etc and its delicious!
OMG!! Yummy thoughts. Oooo and you could do baked sweet potatoes with brown sugar. I want an invite!!! Lol!!

Love this idea and I totally might steal it for our main side dish at our reception! :) I definitely think you could do some fabulous things with a baked potato bar and have it be your "main" food. There are so many different toppings that go well on potatoes.
that sounds delish. but is that all you are going to have? I think i would want more food than that. I would probably get pretty hungry if all I had was one loaded potato.
I just got off the phone with the MIL (she's helping with the food) and she thinks we could DIY this...we're going to have a TON of toppings, a fruit bar, shrimp, etc...to complement the potatoes. Usually half a baked potato fills me up and with all the meat and toppings I think it should be okay. But amariem, you think we would need more?

Has anyone ever been to an afternoon wedding with a baked potato bar? IF so - what did you think?
We were thinking about having a baked potato bar - because we wanted something we could do ourselves(cheap!)
We would of course - totally make it non-tacky with rustic/modern decor and table arrangement. And We have some of the prettiest turquiouse fiesta dishes to serve them (our color).
We were thinking that it would be so much easier than having a large variety of finger foods and so much easier for our casual fun wedding?
What do you guys think?
