2014 is our year to get fit, so FI and I have been doing a lot of thinking about how to change our eating habits. One of the things we’ve decided to do was to start juicing, because no matter how hard we try, we don’t get enough vegetables each day. That said, we’ve realized that no matter how much pulp we add from our juicer back into the juice, we’re left with a bunch of wonderful fruity and vegetably goodness that just begs to be used for something!
So I found a recipe for healthy orange-cranberry muffins (http://www.busybuthealthy.com/orange_cranberry_muffins/), which would be great as we could use some of the pulp from the cranberry, orange and carrot juice we made this weekend, but the recipe calls for protein powder to make the muffins a bit more substantial. I would love to increase our protein intake as well, but I have no idea what I could substitute instead of protein powder, which we don’t have around the house. The only other high-protein food I can think is cottage cheese, but I’ve never heard of using it in baking…
Anybody have any suggestions for Ms. Hopelessly Trying To Get Fit?
