Perhaps you can order whole stalks through a company like this and have them cut down at Home Depot for a nominal fee?
I agree with CarolineG that Home Depot might cut them for you, but due to OSHA laws they now cant cut anything that has any polymer or paint or glue...BUT I can tell you that Bamboo is VERY easy to cut, any guy with a garage can do it. I love that picture! I might steal it!
