You could go to Chile and Argentina, though it's just starting to be spring in November so it won't be exactly lay out in the sun weather.  The beaches in Valparaiso and further north in La Serena are nice.  You could plan a few days there and then head over to Mendoza...though there are some excellent wineries and beautiful wine country in Chile as well.  If you're interested in more info, PM me.  I spent about 3mos/year in Chile during my PhD so I can offer you some suggestions.

Closer to home, you might have better luck with weather in November in Napa...but it sounds like you're looking for a more exotic location.  Have you checked the weather situation in Tuscany?  I have absolutely no idea but it's possible they might have an Indian summer.  You could then head further south to beaches on the Adriatic (though I've only been in July so I can't speak for the weather at that time of year).
