I’ll Start off with a recipe, this is called Cowboy Chicken it is my FI’s favorite healthy recipe. We make it in the slow cooker, it is literally just chicken breasts cooked in salsa, a little mustard, and a little brown sugar. I made this Sunday starting with 5 lbs of chicken trimmed, that is enough for 20 servings, at about 140 calories each. Froze half for next week, and made 10 meals for lunches. Each meal also has about 160 calories of either brown rice or Sweet Potatos, and about 40 calories of steamed veggies. Whole meal is just about 350 calories and it fills me up. I make about 20-24 meals on Sundays and eat them all week, I eat 2-3 a day and my FI eats 1 or 2. It takes a lot of the guess work out of the diet. I personally can eat the same thing many meals in a row, my FI can’t stand it, if you don’t mind a little monotony I would definitely reccomend cooking in bulk on Sunday.

I have 2 latest go-to meals. Every sunday I bake a breakfast caserolle that i bring to work everyday- 9 beaten eggs, 2 packs of cubed ham, 3 bell peppers, couple handfuls of cheese. sautee the bell peppers & ham(i season this w Season-All), pour in a caserolle dish, pour beaten eggs on top, sprinkle the cheese on the top of that. Bake for 25 min at 375* – delish!!
My other go-to is tuna salad. Tuna fish with mayo, boiled eggs, sweet relish and a little mustard. mmm! Both of these are high protein, moderate fat, low carb.

theEguarantee: Do you reheat the breakfast casserole each day? That is simmilar to what I eat but I actually cook the eggs, ham and peppers every morning. Does it reheat well? If it does i’ll have to try that way. It would save a few minutes in the morning.

MakingHerWait: I reheat it every morning! it’s so easy- and delicious every day! my coworkers are begging me to bring a pan of it here for them after i gave them samples of mine one morning lol
