I don't know if it's considered a hole in the wall, but Flying Pie pizzeria was one of my favorite places for pizza, and Dot's Cafe is great for when you have a cheese fries craving. Delicious grub!
@SugerPlum: Nom nom, Flying Pie Pizzeria! I used to live a few blocks away from them when we lived in Portland! In that same area, The Observatory is also super good, and they have some really fun mixed drinks.
In McMinnville, I freaking LOVE Nick's Italian Cafe, mostly for their gorgonzola pizza but everything I've had there has been amazing! In Salem, Wild Pear is great for lunch, and Word of Mouth has the most delicious creme brulee French toast EVER. Finally, I know it's just a sandwich place, but in Eugene the Campus Sub Shop has yummy sandwiches AND they have a bunch of fro yo selections, which is super delicious.

I can't wait to see what everyone says! DH and I are new to the area and we love to eat. Bring on the suggestions!

Okay, this isn't Portland BUT if you're ever around Corvallis Block 15 has the best burgers and fries and Local Boyz has delicious Hawaiian food!
if you are ever in the Eugene area go to Johnny Oceans medterraninan grill. this place is AMAZING!!!
bunk is a really excellent sandwich place in portland, i really like zab thai in hillsboro, radio room in the alberta area is good, cha cha cha's isn't quite hole in the wall since they have a few locations, but they have really good burritos, the waffle window is so cute and amazing, if you like persian food, shiraz is good and they just opened a new location in the pearl, (can you tell i really like food), genies in se portland has amaaaazing breakfast (i highly recommend the white chocolate chip and macadamia nut pancakes - add whipped cream)
As far as hole-in-the-wall restaurants, go... I would have to reccommend Le Happy, which is a crepery in NW Portland. I think it seats like 20 people... Its pretty amazing.
I would also reccommed le Bistro Montage in SE under the Morrison Street Bridge and the Hot Cake House for late night eats. Its open 24 hours, but beware that it gets packed after the bars close. It is off SE Powell... :D
