Are you only interested in staying in Manhattan or would you be open to Flushing, Queens? Another option in Manhattan is Stacy Pitt. She does a lot of wedding updos but is actual a trained stylist and colorist. She works out of her apartment in the East Village, but charges much less than most salons because of that. Though it is hard to book an appointment with her. I've seen her do wonders with many of my friends' hair!
i go to donna at eva scrivo -- she's not asian, but she' wonderful with cuts and color. i wouldn't go anywhere else for bangs because i've gotten some funky bangs from other places!
she's definitely over $100 (maybe $140?), but i think totally worth it.
i've heard great things about hair mates. a lot of people swear by them (and they're affordable).
When I'm in Manhattan, I go to Bumble and Bumble (with my Asian girlfriends). I wish I could remember my stylist's name...
Sei Tomoko is a japanese hair salon chain with multiple salons in the NYU campus area (East Village, West village).
There are ~$50 for a cut. They even give a student discount with I.D.
All the hairstylist have experience in Japan and come to the states...and even the colorists (who are learning, my friend had highlights done) are pretty good.
Look them up on yelp.com. I have all my asian friends (fine straight hair, coarse straight hair, coarse wavy hair) try them....and they go back. Hope this helps.
Thanks all for your great suggestions! Alot of these places will do free consults first so I'm gonna talk to the stylists and hopefully find a good match. Wish me luck!
Another place that you might want to consider is Jun Hair Salon. Its a small place on Mott St. Jun is a Bumble and Bumble alum and opened her own place. She's quite popular so I suggest calling ahead and making an appt. The prices are very reasonable, I walk out with a hair cut, head massage shampoo and blow drying/style for $30 (this includes tips).
I would be careful about visiting Jun Hair Salon. I made an appointment with Jun but ended up with one of her assistants. I should have been more adamant about demanding Jun. But I didn't want to make a scene so I let it go. Big mistake! He gave me short blunt straight-across bangs when I specifically requested soft side-swept bangs and even showed him relevant print-outs. Granted, I've only used their services once. But I would still be careful.
Everytime I go to New York, I have to go to Toshi & Hair mates for a hair cut. I recommend Seiji but everyone else is pretty good too.

I have 3 months to go before my wedding day and need to find a good salon in NYC. I am Asian and have straight hair that doesn't have any volume so I need to find a salon that can deal with that. I have tried so many different ones and been disappointed over and over. Just want a good basic cut that I don't have to style or blow dry (except on the wedding day of course:) I'd rather stay under the $100 range but am willing to go higher if they are really good. Any suggestions are greatly appreciated!
