Hrm. Bake her a cake? That's what I did for BF's mom the year I found out it was her birthday.
Stay away from those bath and body kits, even if you know she has a soft spot for mango-peach-pear. It's likely that most everyone knows she likes mango-peach-pear, so she has a glut of that stuff already.
If she likes to have an occasional cocktail, you could get her a festive wineglass. There's some group that does martini-glasses all painted up with a recipe on the bottom.
Buy her a picture frame in a style that suits her taste and/or decor, to hold a future wedding picture of her son and yourself on your wedding day.
I would even put a "RESERVED" sign in the frame and explain what it is for.

my finance just called me and said thet when he gets home today (in about 2 hours) we are going shopping for his mother... her birthday is TOMORROW!! (don't you love how they wait till the last minute!!!???) Any suggestions? Thanks guys!
