What about the idea of a more casual buffet? Fried chicken, potato salad, corn on the cobb, etc... It's still "picnic" themed and casual, but can still serve as nice sit down meal. You should be able to do this for $12-$15 per person (not including beverages)

I've checked around a bit, and Panera does catering/boxed lunches and they have YUMMY sandwiches and soups.
So, here's my follow-up question....if we want the ceremony to be formal still (long dress, fancy suit) would it seem odd to have the reception more informal with the picnic theme? I want it to be a kind of country dinner-party, but still keep it chic and elegant. I probably wouldn't have people sitting on blankets due to space issues, but I am unsure of having them taking boxed lunches to tables... *sigh*
