Your photographer should be able to recommend a time based on the location. Generally speaking, an hour before sunset is the best time. But early in the morning works as well. I'd avoid mid-day, but it could work depending on the location. Don't see why you couldn't do it on a weekday either, may be even less crowded.
If you are doing them outside then the farther away from noon the better. At noon the sun is super harsh and directly above you which can create unflattering shadows on your face. In the morning and evening the light is nice and soft which will be more flattering. It depends on your photographer but weekends tend to get pretty hectic for us especially during the wedding season so we prefer sessions during the week.

I was always under the impression the best times to shoot are either early in the morning or later in the evening towards dusk, however I have also seen pictures taken more towards the middle of the day.. Just curious, do most brides have their bridal pictures shot on a weekday? If so, what time of day?
