I would do somethug subtle. You could attach a charm or locket with her picture to your bouquet, and/or the bouquets of your maids.
I'm terribly sorry for your loss. My suggestion for honouring her on your big day would be to mention her in the programs.
I did bouquet charms in memory of my grandfathers. Here was my post about that. The last comment on the page tells the cost/where I got them:

I also made sure it was highlighted in the ceremony program that these charms were attached to my bouquet, so people would know. The wording was as follows (I wore my grandparents on my bouquet, he wore his inside his jacket pocket):
In Memory
The small photographs attached to the bride’s bouquet and the groom’s jacket pocket are in memory of loved ones who are no longer with us. We wish you could be standing here with us today, but we know you are here in spirit. You are in our hearts always; we love and miss you.

@Miss PumpkinPenguin: This is a great idea, we have been looking for a way to honor our families as well. Mainly our Grandparents. Kudos!
We chose to have a memorial candle that we lit during the ceremony. Our loved ones names and a poem that we chose were read by our officiant as we lit the candle together. It was a beautiful and touching moment.
I like the program idea to honor her. If I had something like this, I would have a picture of the MOH on some of the tables, and maybe some photos of you and her together, and maybe make a toast in her memory.
