Buffet style ladies...what are you having?

    We have decided to do a buffet style reception with passed apps before.  However, we can't seem to decide on what we want.  What are you serving on your buffet table?

    We decided on a buffet style as well. We are having bread, cesaer salad, pasta chicken alfredo, canalonni, stuffed mushrooms, caprese, and broccilini. Then on the side there will be a little dessert table with "dessert bites" like chocolates, etc.

    We are doing 3 different kinds of tacos, and cheese enchiladas; in additon to beans, rice, chips & salsa.

    Our apps are meat empanadas, taquitos & quesadillas.

    We did an Italian family style buffet - so there was everything from roast pork to pumpkin ravioli on the buffet and people are STILL raving about it!

    Basically the same as CaraMia10 Mexican food! Cheese enchiladas, steak and chicken fajitas with beans and rice

    We had smoked beef brisket, herb baked chicken, and roasted pork loin, along with 4 different sauces to choose from (barbecue from a local BBQ team, apricot mango, cherry chipotle, and dijon horseradish). Sides were salad, a frozen fruit slush, roasted potatoes, a rice dish, broccoli, corn, and dinner rolls topped with sea salt and rosemary.

    We did the same thing.  Our passed app was brie w/ pear preserves on crackers and then the actual buffet was chicken with herbs de provence (an inspiration from a trip to southern france we did last year), a seasonal beet and walnut salad, wild mushroom risotto, and green beans in a pecan vinaigrette.  We wanted to make sure that the vegetarians present would still get a great meal opting out of the chicken, so we put a lot of thought into great sides.  It was delish and the buffet worked out really well (mostly because our caterer was freaking awesome and coordinated everything perfectly).

    We are having stuffed chicken breast, ham, scalloped potatoes, green beans and summer veggies, house salad and rolls. For apps, its snacky stuff like chips, dip, veggies, cheese and crackers....and the best app is my chocolate fountain.

    Oooo, we just talked about this tonight!

    I think our apps are going to be honey ginger satay and tomato, mozzarella, & basil crostini.

    Dinner (I think) will be roast beef, baked or fried chicken, tossed salad, rolls, and two sides, they didn't send us the paper with our sides options though. It also comes with assorted sheet cakes. He wants to add a fajita station in there somewhere.

    And we are having an ice cream bar! We get to pick two flavors, two sauces, and three toppings.

    We'll be having prime rib, grilled salmon, kiwi mussels, samosas, pasta, potatoes, rice, steamed veggies, fresh veggies, and about 4-5 different salads.  Then there will be a dessert buffet complete with cakes, pies, custard, cheesecake, fresh fruits, and cheese.  There will also be wedding cake.

    Macadamia chicken lollipops, chicken sate, mixed greens, summer vegetables, mashed red bliss potatoes, chicken breast marsala, roast pork loin (or salmon), and steak carving station. Also there will be desserts and icecream bar!

    .....I don't think I have a cuisine theme. Just FOOD. lol.

    We had rolls, salad, salmon, carved beef station, chicken, two kinds of mashed potatoes, rice, and veggies.

    Can you keep a secret? (Our guests don't know the menu.) FH and I were doing the LD thing for a while so when we got to see each other, we'd have breakfast dates the morning he or I flew in since breakfast is both of our favorite meal of the day.

    In honor of that, our buffet menu for our evening wedding is: Fresh fruit mosaic, hickory smoked bacon, Virginia baked ham steaks, turkey sausage, cheese grits, oven roasted redskin potatoes, and a gourmet bread basket (danishes, bagels, muffins, biscuits, croissants). We're having 2 made to order stations, one for pancakes and the other for omelettes. :)

    Our passed hors d'oeuvres are lump crab fondue, apple chicken and brie strudel, and pork tenderloin crostini.

    We're having heavy hors d'oeuvres in a buffet-style setting instead of a full meal. We'll have a couple of veggie trays, a pita and hummus station (we have some vegetarian and vegan guests), as well as some sort of hot app (meatballs or boneless wings or something), shrimp, and cocktail sandwiches.

    Apps:

    • Local cheese table
    • Mediterranean mezze table (pita chips, hummus, grape leaves, etc.)
    • Bacon-wrapped scallops (caught that morning)
    • Mushroom-filled phyllo triangles
    • Crostini with Asian pear, fig jam, romano cheese

    Entrees:

    • Pasta: beggar's purse style pasta filled with wild mushrooms and parmesan
    • Rosemary-crusted beef tenderloin
    • Grilled tilapia fish with tomato-lime-cilantro sauce

    Desserts:

    • Wedding cake (chocolate)
    • Strawberry rhubarb pie
    • Blueberry lattice tart

    I'm vegetarian and have a fair number of veg friends (though my fiance and family are omnivores :) so it was very important to me to have GOOD, interesting vegetarian options, not just a portobello mushroom on a plate, or something.
