I bet a lot of flowers come in burgundy and ivory tones!
Have you located any florists? It's both environmentally and economically friendly to use locally grown, in season flowers, and a florist in the area should be able to tell you what'll be available during the season of your wedding! You can start with what's there, and then work up and around it if you need to :)

Hi Ladies,
My FI and I have decided on burgundy, champagne, and ivory for our winter wedding. It will be at a very rustic ranch in the rocky mountains, so nothing too fancy. What colors can be coordinated to go with our color scheme? I'm looking for suggestions for bouquets and center pieces. If anyone has done similar colors I would love to see some pics!
