You just have to watch the deals and book when the time is right. I would probably wait until just before (like a week) for the best deal. I have been on a 5 star Mexico all inclusive in September for $297 (incl. flight).

Hubby and I are trying to do a 5 day 1 year anniversary trip to Cabo San Lucas, we would like to stay under $2K for all inclusive stay+hotel. Is this do-able? Any resort recommendations? How is the weather in September? We tried to stay away from the Caribbean/East Coast of Mexico due to hurricane season.
