wow they sound yummy!! i like the brandy with vanilla and custard, the white cake with strawberry, and chocolate fudge with chocolate fudge (i do love chocolate!)
Our flavors are as follows:
Almond Cake with Apricot filling and Vanilla filling
Chocolate Cake with Chocolate Mousse filling and Raspberry filling
Carrot Cake with Grand Marnier wash and Grand Marnier filling
I love chocolate ... so there had to be a chocolate option, fiance loooved the carrot cake and I typically hate it, but I really liked it ... and I wanted a "neutral" option ... and the baker told me that the (first flavor combo) is actually her most popular. So those are our flavors!
P.S. I would be in heaven with #5
Im kinda partial to a combination of your # 2 and #3. White cake, custard and strawberry mix sounds YUMMY!!!
We did three flavors:
1. Yellow cake with regular buttercream (b/c I'm boring)
2. Lemon cake with raspberry filling (b/c DH is slightly less boring)
3. Chocolate with chocolate filling (b/c who doesn't like chocolate!)
For your options, I would pick: 1, 2, & 5
Honestly, I joke that I'm boring, but I feel like keeping flavors simple (maybe only one type of filling per tier) might work better. Some people are adventurous about cake, but usually people have particular preferences...and if there isn't anything "plain" they might just not want cake at all. And you don't want leftover cake to deal with...I also think that up to 3 is a good number. It's still reasonable that couples can, say, take a bite of each other's and have sampled most of the options.
I love chocolate ... =) I actually thought everyone loved chocolate like I do ... until I met fiance. He is coming around and will nibble on my "treasure chest" of chocolate - to my DISMAY ... lol ... but lots of his family do not like chocolate too. So I knew I needed a neutal alternative. To me, carrot cake is a taste that you either love or hate ... not everyone likes it. So that's how I have 3 flavors =)
Marigold ... I have always HATED carrot cake and would never eat it. When I tried this ... I was so shocked and in love at the same time.
Half of our cake will be white cake with mango curd and fresh strawberries...the other half will be chocolate cake with white chocolate peppermint ganache....yumm-o!

We're a little early on this (but I have to get as much done for the wedding NOW as I can... won't have much time when I get closer to the date!), but FI and I have started cake tasting and we think we've found our bakery. We can do up to three flavors (one for each tier) and here is what we're thinking so far (each tier is three layers of bread and two layers of filling):
1. Brandy-soaked yellow cake with one layer of custard and one layer of either vanilla or pineapple custard
2. White cake with one layer of either regular or vanilla custard and one layer of strawberry cream (we wanted preserves or fresh fruit, but apparently we can't do that in a stacked cake!)
3. White cake with one layer of strawberry cream and one layer of coconut cream
4. Chocolate fudge cake with one layer of bavarian cream or coconut cream and one layer of raspberry cream
5. Chocolate fudge cake with one layer of coconut cream and one layer of actual chocolate fudge
Too many options, and they all taste really good. ;) What would you pick? Or what have you picked already that was a real hit?
