You could try these vegan resources, some are also gluten-free. I'm not vegan so I can't vouch for any of these places, but I do know that Carmelita's is a yummy veg restaurant.
There's a place called Macrina Bakery near Battery St. They do really cool wedding cakes, and I'm pretty sure they do vegan/gluten free stuff. I have unbearable cravings for their carrot cake (a dessert I normally can't stand) and their hot apple cider (made with ginger!) SO scrumptious. Good luck! :)
Try the Flying Apron Bakery off 50th & 11th in the U-District. They are a wheat-gluten-dairy-sugar free bakery that makes really YUMMY alternatives to baked goods. There is a premium, of course, but at least you can eat your cake! Another alternative is to just bake it yourself and have someone decorate it (there are lots of skilled decorators out there will to work on the side). Good luck!
