My cake was two 10″ (3″ deep) layers as well, and I had difficulty getting it to cook evenly.  How long did you cook yours for and at what temp?  Did you use a heating core or anything? 

I’m a little nervous since I plan on doing a 14″ for the actual wedding, and I want it to cook evenly hehe!

Hmm… I did use aluminum non-stick pans, and I decided to bake it at 325 instead of 350 (hoping it would cook a bit more evenly).  Mine definitely took like 65 to 75 minutes though!  Hmm…. I guess i’ll have to keep playing around!
