Feathers...use huge feathers! They're really dramatic looking!
What about tapered candles in candlesticks grouped in threes? I know you don't want to use candles, but they would offer the height you are looking for.

Hi, bees!! I need your help!!
I am using flowers on top of square glass containers with coffee beans for 1/2 of my tables. For the other half I'm trying to decide how to do a centerpiece with tall cyclinder glass containers, coffee beans and....?? I will have a few tea lights around the centerpiece. What can I use instead of flowers or candles?? Any ideas?? My colors are tiffany blue and brown.
Here is my inspiration picture for the first 1/2 with flowers.
