I am always up for chicken and dumplings. Lots of recipes but the secret to ours is the dumplings are butter, butter milk and self rising flour mixed to a sticky biscuit dough consistency and then scooped. It makes them light and fluffier than the rolled out kind.

I never get anything other than rave reviews about my Spinach-Artichoke Pesto. It’s to die for, and probably the easiest recipe ever. 

 

3 packed cups of washed spinach

1 small jar (7 ounce, I think?) artichoke hearts

1/3 cup grated parmesan

1/2 cup pistachios

1/3 cup lemon juice (or more to taste…I usually add about 1/2-2/3 cup)

 

Just toss everything in a blender and pulse until smooth, then toss with whole wheat penne and top with more grated parmesan. To. Die. For.

@MissLibra:  Probably a southern thing, but my sister’s collard greens! She simmers them all day with maple bacon, brown sugar, a tiny bit of hot sauce, or ham hocks (although they were out of them last night at Wal-Mart, so we substituted a prok shoulder- it still turned out wonderful!)

My brownies- they’re from a box, but the trick is to add in extra oil. They turn out moist and gooey!

There are tons of others but I’m not sure if you’re looking for yummy Thanksgiving food, or just food in general

My go-to dish: 4 chicken breasts, 1 can of chopped tomatoes with basil, garlic, and oregano, 1 jar of marinated artichoke hearts, 1 cup of crumbled feta cheese.

Marinate the chicken in the artichokes for at least two hours. Drain the fluid. Put chicken on a broiler pan and cover each breast with the artichoke hearts and tomatoes. Put in the broiler on high for 20 minutes.

When there’s two minutes left, top with the feta.

It is the easiest recipe and SO tasty. If you don’t have a broiler, you could probably get away with wrapping the chicken/artichokes/tomatoes in foil and baking them in the oven. I haven’t tried it that way so I can’t be certain how it will turn out, but I can’t imagine it would be bad.

@MissLibra:  if your baking a nice ham i have the perfect side dish

pineapple stuffing

10 oz can crushed pineapples

1 stick butter melted

1/2 cup sugar

4 eggs

5 slices of bread cubed

mix all together spray pan and bake at 350 for 1 hour

 

corn bread

1 can cream corn

1 can whole corn

1 small jiffy corn bread mix

slice butter on top

mix together bake on 350 for 45 min-55min

 

zucchini quicke

or anything you want to put in it to substitute the zucchini with.

4 beaten eggs

3 cups peeled sliced thin zucchini or anything you want ham,turkey,spinach any one thing or you can split 2 things like ham and yellow cheese mesure each to a 1/2 cup to make 3 cups

1 cup busquick mix

1 small diced onion

1/2 teaspoon salt

1/2 teaspoone minzed garlic

1/2 cup oil

1/2 cup grated cheese

mix all together in round glass pan

bake 350 for 40 min top should be brown.
