We also love bannock on cold evenings because it feels so warm and filling going down and is super easy to make:

I also love tin-foil packets of vegetables. Just cut up some bite-sized chunks of green and/or red peppers, onions, maybe some zucchini, etc, toss them in some oil with salt/pepper and wrap them up tight in tin foil. Then you can leave them on the BBQ or a grill over the fire for about 15-35 minutes (depending on how hot) and they come out all smoky and delicious.
