With more than a year to go, I’d suggest walking around your local flower shop this December to see what’s available. If you look at the flowers in person, you might find something that you really like. For me at least, that was much better than looking at photos of flowers.

As an accent red hypericum berries are beautiful – really deep red (also in other colors) and to me are nice and wintry…

I would say roses are a good fit. They can be expensive though.. Here is a pic of a bouquet of roses – I love the little beads that sparkle in them.

I LOVE that picture, Redeemed Rebekah!  Gorgeous…the only other thing that I thought of were any flowers that weren’t white…but ivory.  Like ivory roses, lilies and such.  But any deep red flowers will “pop” more…

And if you like the ivory roses too you could do ivory in the center and red around the outside. That is what I want to do but mine will probably look like this…

Just remembered a December wedding we went to a couple years ago – they had tall centerpiece vases with Amaryllis in them – they’re gorgeous and elegant (I think)

Not sure if they work in bouquets but worth trying – AND they come in other colors too

You have a lot great suggestions already…here are a couple of varieties you could look up – there’s a deep red rose called Black Baccara (that might even be it in the first bouquet pictured), and an ivory/sand colored rose called Vendela. There is also a caramel colored cymbidum orchid that I think would look pretty with that color scheme.

Another option for you to see what there is out there before Dec rolls around is on a website I love called 2 g roses. It’s found at fresh roses (dot) com and you can look at what they have in stock in Dec ( or any other month for that reason)

It really helps when you are trying to figure out what kind of things will be in season when you are getting married. And you can roll over the names of the flowers, and see what they look like. A perfect site for anyone wanting to learn a bit about flowers.

You may want to consider Black Roses and Vendala (Ivory) Roses. Also, adding pine cones might help with the chocolate color.

For centerpieces you could use poinsettas, they are around EVERYWHERE at that time, or you could also do white flowers (as others have suggested) in a tall vase and then put cranberries in the water to have that pop of red.  I think it would look great!

so I also had a winter wedding and used ivory with deep red accents. I stuck with an ivory bouquet of peonies and roses and the bridesmaid bouquets were dark red. The groom wore an ivory flower bout and the groomsmen wore red to match the bridesmaids. To mix it up on the tables we used half high ivory arrangements and the other half were floating candles with red rose petals.
