@PermaStudent:  I took a picture, but it didn’t look that appetizing! LOL I actually cooked 2 cups of white rice, nuked half a can of spinach and a whole can of mushroom buttons, mixed it into the rice, and added a 16 oz jar of Bertolli’s Alfredo sauce. Tossed in a dash of onion powder and garlic powder, and stirred it all together. It came out SO yummy. And for the record, I am not actually a vegetarian of any sort, but occasionally I do enjoy meat-free dishes. 🙂

I currently have chicken tortilla soup in my crock pot, which I’ve never made before. I’ll post a pic if it turns out well, haha. Wish me luck!

Last night I made avocado, black bean, fresh spinach burritos (charred the wrap a bit on the burner) and they were almost no effort and super tasty!
FI got cheese and chicken on his, because apparently I eat like a rabbit.

I love instagraming my food for some reason. Probably because I just love food in general. With the way I talk about it you’d think I was either a starving kid or never left the sofa…..

-Southern Classic Brunswick Stew

Couscous cakes with black bean & corn slasa and homemade guacamole

Leftover rotissere chicken turned BBQ chicken Pizza

Lemon chevre penne with spinach & chicken

Zuccini & Chicken Mojo

White bean & Kale soup

Also we have a couple of these in the cabinet, for the nights we don’t feel like cooking (I usually add chicken or something else to ‘improve’ it, if I’m wanting meat or whatever):

Thai salad with spicy peanut vinaigrette. EAsy peasy, and very little prep time!

My two contributions are not healthy or pretty, but I loved them 😡

Cheeseburger Pie (their picture looked WAY better than mine): basically, everything you’d put into a hamburger baked into a pan lined with spread-out crescent rolls. BF loves it.

And I love me some nachos!

I made some curry for dinner tonight. It tastes a lot better than it looks lol. It’s mostly veggies (cauliflower, carrots, potatoes and peas) but I added a little bit of chicken too. It was really good and best of all it’s healthy!
