Have you ever tried the Philly cream cheese cooking cream? It is similar and is for cooking..unless you are trying to be super healthy. :) Let us know if laughing cow works...
HungryGirl uses it in a lot of her recipes, that's how I found out that it was cooking safe. Mmm, love Laughing Cow.

That sounds so good! I am going to have to try using it for cooking as we always have a massive amount in the house (sam's club). I tried the Philly cooking cream and was not impressed. IMO a better cream sauce can be made with cream, garlic, and 20 mins lol.

He's always genuinely curious but it makes me realize that it probably doesn't fit into my points budget for the day. :( I'm glad to hear it's not great, I keep looking at it lustfully when we pass the creamcheese section.
@MrsSl82be: yeah... FI is the manager of a dairy department here and if he had not got it for free, I would have been mad that I wasted the money on it. It just lacks flavor and zest for the amount of calories in it. If I am going to indulge and clog my arteries it needs to be amazing.
Alrighty since you all wanted to know what I did and how it turned out.
I did this with boneless skinless chicken thighs, but you can use whatever.
I used the chipotle laughing cow cheese and since I LOVE spicy food I added crushed red pepper and a little cayenne and some garlic. I spread that on the inside of the chicken thighs and folded them shut and laid them in a baking dish
Then I brushed them with olive oil and sprinkled on a few herbs (thyme, savory, marjoram) and a little paprika.
Baked them covered, at 350, for 20 or so minutes until they were just this side of done and then put them under the broiler for a few minutes to brown the tops.
Served with roasted garlic parmesan mashed red potatoes.
Yummy!

So I found this recipe for chicken stuffed with cream cheese and herbs and I was thinking of using chipotle laughing cow cheese instead of cream cheese. Does laughing cow melt well or will it turn out all gross? Has anyone cooked with laughing cow?
