Do you have how much money you owe and the # of people being served in a contract with your caterer? If you have a written and signed contract I think it would be hard for her to be able to you more than you owe, even if she made an error in how much you would need for the stated amount of people you expect-that would be HER error, and it would seem that you agreed to what she originally recommended due to her being the expert, so I wouldn't think that you should have to come up with a lot more money. Just sayin'
If you wnat to check the amount you have ordered, why not contact some caterers in the area where you ARE living. Tell them your plans, numbers etc and ask what they recommend for the number of appetizers per person.
Do not waste their time going into pricing- just tell them you are doing preliminary research.

Bees, I discussed with some of you a long time ago in a post-a-thon thread that I was having troubles with my caterer. She is a lovely woman, super nice, but seems to have trouble running business, specifically with crunching numbers. She mis-quoted us twice (lots of math errors) before giving us a correct quote.
So we finally decided on a menu for our wedding. She had given us a quote based on 70 guests, and we had given her a timeline for the wedding day MONTHS ago, and she knew this when she was generating a quote and estimating how much food we would need (we are having an appetizer's only reception).
So now we thought everything was resolved, we picked the menu selection, and added a few more appetizers for the cocktail hour for good measure. She then sends us an email back saying she thinks that we won't have enough food!! HELLO! She KNEW how many guests were were having and the wedding day timeline! I am worried she is trying to make us order too much food so she can make extra money. We are on a tight budget, and I am pretty mad right now because we gave her all the details months ago. We live across the country from her, so we can't talk in person, but I am finally going to have to get up super early to call her with Fiance before we both head to work (there is a four hour time difference and we can't call from our workplaces).
Anyone else having catering stressors? I am just frustrated, becuase you depend on catering people to be the event "experts" and I feel like they are not experts at all. I am also surprised because they received many positive reviews and have even won awards. I just don't get it!
