When we met with our caterer and were drawing up the contract we discussed menu options then… so when we booked our tasting, she knew ahead of time what to prepare…

Since this is not the case now, I would shoot her a list, by category, of things you wnat to taste. If you send her too many options (which I don’t think there ever could be for a tasting! ) I’d think she would let you know…

the point of the tasting is for you to decide what you want to serve at the wedding, and how the courses will flow together. you should be able to request a variety of options, the caterer will make them for you in her own way, and then you decide the final menu. if you get 4 different apps, have her make 6 or 8 varieties (especially if they are things you haven’t had before).  you should be able to choose from at least 2 salads or soups, and at least 3 entrees (so you can figure out the best 2!). it’s common to try a million things & pick your favorites. otherwise how is it a "tasting"? i believe miss bubblegum just posted on this too.
