Hydrangeas could work to make fuller centerpieces at a lower cost.  I was thinking shorter arrangements when I saw your venue.  With pillars and slightly lower ceilings it might keep a more open feel with shorter ones.  But a lot of that is how it looks in person, so maybe you could get some tall flowers from a store and take them by to see how you like the look?

With the gold chivari chairs, I’m guessing the upholstery is  cream colored not white.

If so, I would include cream, purple and green flowers:
