What about Garfield Park Conservatory? The surrounding area isn't so great, but I've heard from others that they had a fantastic time at the weddings there.

I've heard bad things about the conservatory. When it rains there are mud puddles every where. Plus it's open to the public and you have people all around and it might not be that easy to take pictures. Just something to consider.
I'm not sure about the view of the Fire Works, try some of the lofts that are out there. The one that immediately comes to mind is the Ravenswood Billboard Factory. The best view of the fire works would be from Navy Pier (uber expensive) or from the lake. It could be cool to do a dinner cruise reception, and it may be more affordable than you think.

The wedding is intended to be the 4th of July Weekend, want a summer vibe, view of fireworks, tent-country club feel for 250-300 guests.
How do I decide?
Galleria Marchetti - perfect, but too expensive
Monastero's - indoor :(
Victorias Beau Joile- too structured, indoor, boo Schiller Park and industrial park feel but has windows!
Park Ridge Country Club - only holds 240, no bar in the room...
