I don't like salmon, but that's because I'm not a seafood person. We are going to have salmon at our wedding! I love all the options you presented, but think the roast beef and chicken with pasta are my favorite two!
Are there any vegetarians? Vegetarians don't eat fish...unless they're a pescetarian. Just wanted to throw that out there! The food choices look yummy for meat eaters though! :)
my fiance is the only vegetarian we know that's invited =[
but we'll have rolls and four side dishes, including pasta and other filling dishes, that he'll enjoy!
That Italian chicken dish just made me hungry all over again. It sounds perfect for a light dish at a summer wedding.
The chicken with the wine and pasta sounds absolutely amazing and perfect for a lighter meal. If you want to stay with light food Id go with the salmon and not worry about having two "white" things. If someone doesnt like fish, they can go for the chicken!
Personally I think it's a better bet to go with the chicken- as almost everyone eats chicken. Suprisingly for fish lovers a lot of people don't eat fish. And I personally would take chicken any day over any type of beef. I LOVE chicken done in almost every way. Lets just say if we were what we ate I'd be flapping my wings right now.
I asked FI to weigh in on this one and he said that the first chicken dish and the salmon are the only two light-ish meals. So I voted for those. The beef would be really heavy and teriyaki is a very heavy flavor.

This is an outdoor end-of-the-summer dinner buffet in the midwest. I wanted to keep the fare somewhat light (no heavy pastas) and am leaning toward the salmon as one entree choice.
Also, isn't there some weird rule about having two "white meats"? Should I have fish and beef instead of fish and chicken? Or chicken and beef since (maybe) a majority of our guests won't eat salmon?? What would YOU prefer as a guest at my wedding? :)
