It's all about what your guests are okay with - you know your families.
It is was chicken it would be fine for me, fish less fine but still okay. As long as your caterer can provide meals for vegetarians or other special dietary restrictions upon request I think it should be okay.
@randi651: I guess I would only be upset if the bride knew I was a strict vegetarian (I am not). I would offer an option, either that they can pick before the reception or if there's a buffet, instant options.
Chicken is fine, as long as if someone is a vegetarian they have another option.
I personally prefer options... I would be 110% fine with chicken, but if my only option was beef I would be pretty put off. I would say fish as being the only option probably isn't the best either. Also, as PPs said, make sure to consider vegetarian options... I think if you offered both fish and chicken that would be fine. (Unless you have a vegan or vegetarian that doesn't eat fish, then take that into consideration too.)
We are having only one dish, which is chicken. None of the people attending our wedding are vegetarian, kosher, or have any other dietary restrictions, or we would offer other options to suit them. Me personally, I don't care what I'm offered at a wedding as long at it's edible and there is something on my plate I can eat. (Often the vegetables with the meal are something like squash and peppers, neither of which are edible in my book, but I can eat the chicken and the roll, so I'm fine with it.)
I feel like chicken is completely safe as long as you don't have any vegetarians or as long as they can get some food too!

I'm weird and picky. Fish makes me gag. Sometimes I like chicken, but it really depends on the way its prepared. I would always choose beef given the choice.
Chances are you won't have someone like me. ;) As long as there are options for people with dietary restrictions (gluten, veggie, etc), you'll be fine.

We have an ourside catrer and didnt want people to have to dhoose a month gefore so everyone is getting the same, filet and chicken.
No matter what you post about as a meal option, some one will chime in about not liking your plan.
As a vegatarian, I know that there's a chance I won't eat my entire meal at a wedding and that's just fine. Every single person can't be catered to.
If your caterer has a silent vegetarian option (meaning, it is only offered if someone specifically asks for it), I think you are going to please most of your guests.
I think that's totally fine, as long as there's either a vegetarian option, or enough vegetarian sides that someone wouldn't starve if they didn't eat the chicken. A choice of chicken or fish would be nice, but beyond vegarianism I don't know many people who don't like a boneless skinless chicken breast.

What do folks think about having a choice of entree at a wedding? Would you be upset if you did not have a choice (if it was chicken)? And would the choice of chicken or fish be sufficient? Any input would be appreciated!
